Which software is used in hack rf one SDR

There's plenty of options here:
https://hackrf.readthedocs.io/en/latest/software_support.html

Although is not very fast you can even use it with Matlab
https://www.mathworks.com/matlabcentral/fileexchange/55537-hackrf-toolbox-with-spectrum-analyzer

And plenty of github repositories for more advanced users I guess

I suggest trying our GQRX or GNU Radio. There are other options as well, as suggested by others.
