It looks like QGIS 3.16 has an issue with python dependencies, that can be solved running the following lines:
/Applications/QGIS-LTR.app/Contents/MacOS/bin/pip3 install --upgrade pip /Applications/QGIS-LTR.app/Contents/MacOS/bin/pip3 install --upgrade Pillow
or

(just check the right folder under /Applications)
