When loading album templates, the following paths will be looked at for the files it needs:

/wp-content/themes/twentytwentythree/foogallery/
/wp-content/plugins/foogallery/extensions/albums/
/wp-content/plugins/foogallery/templates

By default, the files are within /wp-content/plugins/foogallery/extensions/albums/ so in order to override that, you can add a folder to your theme, called foogallery so that it gets picked up first. You could just copy the exisitng album template and then tweak it to your liking
