[Stack Monitoring] Research using Data Views within SM

As part of #120384, we are trying to come up with the best way forward for allowing users to modify their remote patterns via ccs. We could add a setting to Advanced Settings or a setting to Kibana config but there is concern about handling index selection by concatenating strings stored in different place, further separating ourselves from the rest of Kibana.

This issue is for a short R&D to investigate what it would look like to use Data Views in Stack Monitoring and if it could provide a better way to handle our ccs problem. See #120384 (comment)
