docs: describe how resource attributes are mapped to service, cloud, process, etc. fields

See #8074. We should document that only OTel resource attributes are mapped to fields corresponding to fields that describe the service and environment it runs in (cloud, process, etc.). Event-specific attributes are mapped to things like HTTP request URL, and status code; they never map to service-level attributes.
