According to PEP 494, the last security-only release of Python 3.6 was 2021-09-04. It has reached it's EOL over 2 years ago, and is not tested in CI anymore, so should be removed as a supported release.
Docs are adjusted to not specify versions, which constantly change.
Also update a few CI-related versions, and rename the job name in "weekly.yml" to "weekly" (was "environment").
