tests demo is broken

the test demo is currently broken. It looks to me that we have an undeclared dependency on the shakespeare demo which is no longer installed on the webpage server by default.

We can either replace the tests with something else (introducing some simple xqsuite stuff in the app.xql of this app) or we need to include shakespeare in the website and declare the dependency here in expath-pkg.xml

@eXist-db/xquery-contributors thoughts?

we need to have the exist.log to see what the NPE is about..... (I expect somehow a NPE during writing to the log file)
