If decided to stay with httr, look at httptest
(alternative is to switch to crul and then use webmockr and vcr for testing API responses, see #4 )

This thread about testing API packages on rOpenSci forum also mentions https://enpiar.com/r/httptest/ so you could use that and keep httr.
