@galaxyhaxz, could you confirm which of these releases jap_05291998.out and pal_12121997.out correspond to?

The dates correspond to the build of the DIABPSX.BIN located on the disc. jap_05291998.out is the official Japanese release SLPS-01416. The other pal_1212997.out is a debug/early beta build of SLES-01156, known as "Easy as Pie". See here for information on the rest of the builds, which are not publicly released:

By the way, those two "Unknown" builds are both just typos. You can remove them. Also, I want to try contacting the owner of these discs and see if they will share the symbol files with us. The more the better!

Edit: Also, the symbol files were dumped using the official SDK tools provided by Sony.
