feature: Have embedding servers be dynamic on a per deployment basis

Description

The idea here is to introduce a new route /embedding_models to get all the available embedding models from the server and display that on the frontend instead of how we do it right now. Each deployment will have the option to have different embedding models based on what the administrator chooses.
