Migrate to new version of carbon components

Scope:
Carbon component mapper

Description
Migrate to new package @carbon/react@11 from v10.

Checklist

• Upgrade all @carbon packages and their dependencies to the latest stable release
• Do not add or remove any carbon components. Any missing component should be re-created from available components.
• Make sure all carbon existing unit tests are passing
  • the test assertions should not change unless the carbon component output has changed
  • the DDF schemas should not change unless the component API has changed
• make sure the carbon UI build is passing
• Validate the documentation package and all carbon stackblitz examples and templates
• add migration guide for changed carbon components
