On my humble end-user test cases I found PaperEdge to be the best cropping model out there so far (December 2024).
It crops almost perfectly most of the images I fed it with (folded edges, staple, double-sized) and handled correctly situations including long colored rectangles along sheet's borders. In some rare cases a support/table border got confused with sheet's border, but I'd say cropping is satisfying in 95+% of common cases.
One delicate aspect I observed was unwrapping distortion. I found the model to be rather good with a tendency to over-bend. A couple of over-distortions were observed and text along folded edges triggered this behavior frequently. A couple of examples (red arrows)
I suggest to improve/enrich existing/future datasets with this class of documents and folding situations so that unwrapping could more often maintain text geometry..
