Seitan:
Ingredients:
-Gluten flour
-Tasty broth (it can be water or any stock you have laying around)
-Soy sauce
-White tofu (optional for extra nice texture)
-Spices (I like fennel, curries, paprika...)
-Salt or stock cube
Instructions:
-Mix well the broth/water with a good splash of soy sauce and the spices, salt, etc (it can be quite strong this mix, as you will later mix it with a lot of flour).
-If adding the block of tofu, blend it with the previous mix.
->It should be more a watery than a creamy mix.
-Add in the gluten flour until it becomes a humid, compact dough.
->It should be easy to handle by hand, breakable but manageable.
-Start kneading.
-> But really, it is mostly hitting and punching the dough against your kitchen counter. Violently. The more you punch it, the better texture you will get after cooking.
-Cook with vapour or directly boil it with water that covers it.
-> Depending on the size of the final dough, the cooking takes from 30 to 45 mins until it is firm.
->When not properly cooked in the inside it it a bit gummy and NOT SO GOOD.
-Once cooked it can be eaten directly or sauted as you would any 'meat'
