Actually not sure whether the NVIDIA parts are open source or redistributable license-wise... we should check this first

so it seems that https://pypi.nvidia.com/cudf-polars-cu12/cudf_polars_cu12-24.10.1-py3-none-any.whl#sha256=3aeb03d20bbf944106c86e22714437316148c86f659d9e691bf2a11cccbae8f5 ships with Apache-2.0 license so we might be able to get this into conda-forge
