- Use rio-tiler 2.0b1 and its new COGReader and STACReader

This is not really a breaking change itself but it requires the new rio-tiler beta which breaks a lot of things so it's safer to use a major version.

In Addition to the switch to rio-tiler.io.COGReader as parent class (we just extent to add tms and new tile method), we've added STACReader (following the same pattern).
