[Bug]: Documentation Deployment is still on python 3.8

📝 Description

A new version of the documentation can not be published, as the installation fails. This is due to the switch from python 3.8 to 3.9.

🎯 Expected Behavior

The documentation should be created using python 3.9 or higher.

🐞 Current Behavior

The installation fails, as the dependencies do not support python 3.8 anymore.
