Windows testing fails now that I have included mbuild as a dependency (fails during the mamba package setup). As such, conversion to mbuild has not been tested on windows (I turned off windows testing). I'll note that the base of the code (System and Molecule classes) were not changed when adding in conversion to mBuild Compound functions; tests of these core functions passed on all platforms, so I think everything is good.

mbuild CI is also failing for windows, so there must be some mbuild dependency that is causing issues (this has yet to be resolved in mbuild).
