Set up analytics to keep track of word count, languages

This idea emerged during the multilingual functions chat - the idea is that we log the datetime, number of words parsed and the languages used for queries as a way of showing how much the site has been used over time. It could be used for all sorts of cool visualisations and doesn't create any privacy issues or concerns about content being saved.
