Using BIOS F12k and upgrading Opencore to 0.7.5, you can now enable Resizable BAR in the bios (for gaming speedup in Windows) without breaking macOS boot.
Just requires 2 quirks enabled as shown in link above ^
Confirmed working on my system (I was able to set AppleGpuBars to 8 without issue) and should be good to enable by default for any system running F12K. I did not test any other BIOS version, but I would imagine it will work just fine.

Need to update your bios version for the option to show up. I'm on F12K
I have this motherboard and even though i've enabled ReBAR in bios (set Above 4G decoding to Enable, CSM support to Disable, and Resizable Bar to "Auto", the only other option is "Disable") my GPU-Z and Nvidia Control Panel System information still report Resizable BAR: NO
Resizable BAR Enabled in BIOS: No
Everything else in GPU-Z is Yes
I've tried on both F12L bios (which has had the option), and the F13 bios that released this year (the only change is LogoFix apparently)
EDIT: You need to get a vbios update from the card manufacturer, GPU-Z Misleadingly will say "Resizable BAR Enabled in BIOS: No" while saying "GPU Hardware support: Yes" if you need a VBIOS update, not a motherboard BIOS update/settings change
