Stable(r) version of ghcr.io/apigee/registry-tools:latest

Hey @timburks,

Are you building any docker version tags for the ghcr.io/apigee/registry-tools image?

I'm building a custom container from this and would prefer a stable or more stable version than the latest

I could not find a way to see the existing images, if you know this please educate me :-)

@stokedout, as @giteshk pointed out, this is our latest tagged release:

@giteshk I've added a stable tag that points to v0.6.8, but no build action was triggered and I wasn't able to use stable to fetch an image. I'll look into this further, but please let me know if you have a quick way to get stable images published.
