The key "informal" is used to mark features, that are there without somebody having constructed them or doing maintenance. It is becoming ever more popular to apply this on paths that have no official designation, the iD editor hast it in its presets. Perhaps for a hiking map, it might be of interest to make them distinguishable? I'd like to try styling them in Trekarta (my fork).

Southeast of Vienna - https://overpass-turbo.eu/s/16kL - by a well-known tourist club
In the Teutoburger Wald - https://overpass-turbo.eu/s/16kO - by locals engaged in nature preservation
I posted an issue on OSM Carto about it, and it did not get immediately rejected.
