Upgrade docusaurus to v3 #62

Follow the migration guide to migrate to v3.
A previous attempt to upgrade docusaurus to v3 failed with two key blockers:

Docusaurus v3 requires react 18, and there are compatibility issues with react 18. So this task has to be done after React 18 compatibility #35.
Live code blocks in mdx files where not working. In fact, any code block would be rendered in the same weird style.
