I can confirm that the hotkey - once selected - stays active on new images (after clicking 'done'), and if you have used it for a herd of buffalo in previous photo, for example, there's no way to unset the hotkey for current image and you're stuck doing buffalo.
Additional request: a button or another key to press to unset the current species hotkey.
I think the answer for the persistence issue here is going to be a user-by-user preference, so this will need to be something added to a user profile. The more immediate solution of just making the hotkey reset-able is gonna be addressed in #110 . This one will require a bit more thought, but is a great idea!
