If you set the expiration, the items are no longer deleted from the inventory. They remain in the inventory until they expire and you can use them until then.

expired usable items can't be used
anyother item that is expired and non usable will stay in inventory until you drop it or modify your scripts to detect it.

It is not about expired items but about items that have not yet expired.
For example, if I have 5x bread in my bag and use one to eat, I still have 5x bread in my bag afterwards.
This remains the case until they have expired.
