I have my Wi-Fi set to off on my pocket sprite, but I noticed today that it's wifi was found by my phone. Images below show the issue.

I believe so. There wasn’t any firmware update since launch. It’s a shame.

I've seen some other forks with nice progress, such as #20, but it seems they will never get merged. Do you know how I can compile these and use them myself?

Indeed. I did it myself some time ago.
Basically follow the instructions on this link:
https://github.com/PocketSprite/8bkc-sdk/blob/master/docs/gettingstarted/index.rst

You will need install ImageMagick and GCC compatible with your OS, I compiled it on Windows 10 and it works.

Also you will need ESP-IDF Framework. The main chip of pocketsprite is based on that framework.ç
