Screenshots of jetbot\notebooks\collision_avoidance\data_collection.ipynb's screenshots are sometimes corrupted

Issue:

In the screenshot function in jetbot\notebooks\collision_avoidance\data_collection.ipynb

file, some files that will appear screenshots when using some problems cannot use this photo, when training the model, these corrupted photos need to be deleted one by one, which is very troublesome

Suggestion:

Change the screenshot function of the file to use opencv to screenshot the following figure, and the file will not have problems with the screenshot file
