Update logging, again

Logging needs another pass. There's some general distaste for winston and we need to know that the system logs what and when we expect. Stoopid is a possiblity.

What are the shortcomings of winston that we want to address?

A few off the top of my head are the program end loss issue, poor rotation scheme, some extra complexity in how we're hooking it all together.
