Is your feature request related to a problem? Please describe.
The library doesn't currently support the latest version of joi (which has a number of breaking changes).

Describe the solution you'd like
Switch to the latest version of enjoi (and joi), and update tests in line with changes to joi.

Additional context
I was very happy to contribute to this, so I'm about to raise a PR for this change.
