I would like to create several new entries in the Applications and Defi categories.

Do you allow people to contribute?
What format do you expect us to use?

Yes - contribution is welcomed

To create a new page, you would

create a folder under src/pages
folder structure maps to url, for example app/erc721 maps to solidity-by-example.org/app/erc721
Put content inside the folder
Please check example at https://github.com/solidity-by-example/solidity-by-example.github.io/tree/gh-pages/src/pages/app
Add link to src/index.ts. This is the homepage
