Add Erigon Configuration for Linea Mainnet and Sepolia
This PR adds Docker Compose configurations for running Erigon nodes on Linea mainnet and Sepolia. Key updates include:
• Docker Compose setup for Erigon.
• Use of named volumes for better isolation.
