Use Mintlify API to auto update API docs #11

Currently, when the Open API changes upstream, the docs pages for the Open API spec does not always regenerate.

We can use this Mintlify API to regenerate docs, but need to pay for the Startup Plan.

The only way I got it to change before was by adding and removing the
openapi field in mint.json.
