[Flathub] Add Jellyfin

I recommend adding Jellyfin Media Player to supported apps. I've installed the flatpak on my Arch machine and it works well. Only issue is I can't seem to get my controller to work with it.

One can also install Kodi and then install the Jellyfin plugin but it's more of a pain to setup with multiple user profiles.
