Migrate solution to .NET 6 and ASP.NET 6

Considerations

Upgrade solution and csproj's
Bump NuGet packages
Update Dockerfiles and other relevant infrastructure
Consider rewriting to the new hosting model (not a requirement) - see link below
Perform thorough testing before releasing
