Spicy Tofu Stir-Fry
Ingredients:

1 block of firm tofu, diced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 small onion, sliced
-
3 cloves of garlic, minced
-
1 teaspoon of grated ginger

2 tablespoons of vegetable oil
-
2 tablespoons of soy sauce
-
1 tablespoon of sambal oelek (or more if you like it really spicy)

Salt to taste

Cooked rice for serving
Instructions:

Heat the vegetable oil in a large skillet or wok over high heat.

Add the diced tofu and stir-fry for 2-3 minutes until lightly browned. Remove from skillet and set aside.

In the same skillet, add the sliced red and green peppers, and onions. Stir-fry for 2-3 minutes until they start to soften.

Add the minced garlic and grated ginger to the skillet and stir-fry for another minute.

Add the cooked tofu back into the skillet with the vegetables.

In a small bowl, mix together the soy sauce and sambal oelek until well combined.

Pour the soy sauce mixture over the tofu and vegetables, and stir-fry for another 2-3 minutes until everything is hot and coated in the sauce.

Taste and season with salt as needed.

Serve the spicy tofu stir-fry over cooked rice.
